We wanted to do something special with our first empty barrel of Rye Whisky so we decided to put an Imperial Stout in it for several months. We’ve carefully taken some small samples along the way and we couldn’t be happier. She clocks in at 12.5% abv so smaller serving sizes required. She’s in kegs ready to go right now and we are planning to release her on Friday, our one year anniversary. Holy cow its been a year. Good grief…

Collaboration alert! We’ve worked with Brandon and Brandon down at Creation Coffee before for a beer, and we use their cold brew in one of our cocktails too so this one is a natural fit. We had a meeting with the guys awhile ago and they also gave us a tour of their roasting facility. We ended up deciding on Ethiopia Worka Sakaroa cold brewed coffee. It provides some berry and fruit notes that we think work well with the beer. The beer was brewed January 3rd 2023. My brother’s birthday. Happy Birthday Dan. 🙂

This one was a bit of a challenge for us. We brewed a recipe that was very similar to our Lime Sour we did earlier 2022. We had a little trouble sourcing the special yeast we use for these recipes, but we worked that out with the help of Michigan Brew Supply. Thanks again Nicole and Matt. Also, we ended up buying a tequila barrel and adding this beer to it for safe keeping. At some point we’d love to use our own Mezcal barrel, but that is farther down the road. Another challenge came in the barreling. The barrel needed a lot of love to get water tight. Derek also built a special rack on wheels for the barrel. You rock man.

This beer came from a brainstorming session the production crew had at Whichcraft Taproom and it came together quickly. The oats provide a bigger, smoother mouth feel and balance out the subtle bitterness. Notes of chocolate also show up.

This beer is an effort to do a lager, but something of a departure from the traditional European and American versions. We just brewed this one so stayed turned for more information as we have it.

We brewed this on Ferurary 14th with blackberries, blueberries, strawberries and raspberries. Initial tastings are very promising. We are also toying around with some garnish ideas. I really think beer garnish is under-served and has lots of room for growth. There isn’t much that “traditional” about this beer, so why not take thing even further?

This one is Kevin’s brain child. He smoked a good bunch of figs and tossed them in a barrel of our rye whiskey back in August. This one will be a very limited release so keep an eye out here or social media.

Another beer that is still in the R and D phase. We have a passion for interesting flavors and ingredients and we think this fits right in. Don’t be confused by the nature of Spruce tips either. Tips are not piney like you’d expect, but more citrus and actually sweet. I know, right? The history of using spruce tips in beer dates back to colonial America and maybe farther. We’d like to do some local foraging for this one as well. For now, we just need to wait for the weather to get warmer and the trees to start putting out their new shoots.
